3 cups diced sweet potatoes ¼”
¼ cup diced sweet onions ¼”
¼ cup diced green pepeprs ¼”
1 tbsp (bias cut) green onions
1 oz bacon (smoked)
½ tsp minced fresh garlic
1 cup diced andouille (or smoked sausage) (prefer andouille) ¼”
1 tbsp unsalted butter
Peel and dice sweet potatoes. Blanch potatoes until about 50% cooked. Lay out on sheet pans and place in cooler to ensure they cool quickly.
In large tilt skillet or roasting pan, render bacon fat, add Andouille sausage, allow to cook, layer in the onions & garlic, then green peppers, once desired consistency is met, add sweet potato, allow to cook for 5-7 minutes. Pan up for service.
**Be very careful when adding the potatoes, the more you work the pan, the potatoes will break up. If necessary, place hotel pans in oven to finish cooking once completely mixed.
